Not All About Coffee

Bangkok nativeWatcharee Vanijyananda began visiting pai around 20 years ago. She fell in love with the local culture and environment. And was particularly struck with the town’s tradition Shan architecture.

During her travel in America, England and Italy. Watcharee enjoyed drinking espresso in small café in historic European buildings. Eventually it became obvious to her that the old-world ambiance added much to the coffee drinking experience. She also understood how such business could contribute to architectural preservation while earning a steady income for their owners.

When she and her husband Prapakorn decided to move to pai in 1999 to open their own coffeeshop, the scoured the small town for the suitable building. An abandoned teak-and-rosewood house on Chaisongkram Road soon caught their attention, and they were delighted to find that its owner, Wanicha Busakorn, was willing to rent it to them.

The owner was explained to them that many families had lived in the wooden house over the century and a half since it had been constructed using traditional Shan building techniques. Although the building mostly served as a residence, more than a few inhabitants had run simple businesses on the premises

When Wacharee and Prapakorn began cleaning and renovating the old house, they came across cooking utensils that suggested it had most recently served as a Muslim restaurant . Some modifications had been made to the house before they rented it. A previous owner had replaced the traditional leaf roof, with corrugated gypsum tiling. More significantly, he enclosed the chan (veranda) in order to expand the traditional khrua fai (hearth kitchen) in to a larger affair. This later modification made it all the more perfect for the couple’s coffeehouse designs.

Graduates of Chulalongkorn University and King Mongkut’s institute of Technology respectively, the couple had no previous experience in building renovation but they learned as they went along, with a little help from Shan artisans who knew the original designs intimately, To fund the renovations, the couple sold their Honda Civic, and soon set about restoring structure.

Since there was no paved road in front of the house when it was originally build 140 years previously, the continued upgrading and sealing of Chaisonkram Road had left the house lower than the street level. So the first thing they did was raise the foundation to bring the house even with the street. They then sanded and refinished all the old teak and rosewood planks throughout the house, bringing out rich colour and grain nearly lost to hardened dust and neglect.

Now that they have run All About Coffee for over seven years, Watcharee and Prapakorn reckon that at least half of their customers are attracted as much by the cozy ambience and historical significance of the building as they are by the coffee (which, incidentally, is especially roasted for the Vanijyananda in Bangkok). The realize that Pai has a large number of places where one can drink fresh brewed coffee. But they also know that very few come with such faithfully traditional surroundings.

All About Coffee enjoys a very steady clientele and in high season it is always packed. For the Vanijyananda the café served not only as a way for them to earn a living but also as an example to other businesspeople in Pai as to how cultural preservation can be economically rewarding. The building’s owner shares this conviction and together they hope that other local residents will resist the temptation to sell replace them with modern cement shop houses.

คนกรุงเทพโดยพื้นเพ วัชรี วาณิชยานนท์ กับการได้มาเยือนปายในครั้งแรก ราว 20 ปี ที่ผ่านมา วัฒนธรรมพื้นบ้าน สภาพแวดล้อม โดยเฉพาะอย่างยิ่งสถาปัตยกรรมฉานแบบดั้งเดิม คือสิ่งสำคัญที่ทำให้ทั้งคู่ผูกพันกับสถานที่แห่งนี้

ระหว่างการเดินทางท่องเที่ยวของวัชรี และประภากร(สามี) ในประเทศอเมริกา, อังกฤษ และอิตาลี การจิบกาแฟเอสเพรสโซในร้านกาแฟเล็กๆ ในตัวอาคารที่เต็มไปด้วยเรื่องราวในบรรยากาศเก่าๆ นั้นได้เพิ่มรสชาติความรื่นรมย์ของการจิบกาแฟให้มีรสชาติดียิ่งขึ้นด้วย ไม่เพียงเท่านั้นทั้งคู่ยังมีความเข้าใจในเรื่องของธุรกิจ และการอนุรักษ์สถาปัตยกรรมโบราณ ซึ่งสามารถสร้างเม็ดเงินให้กับเจ้าของกิจการได้เช่นกัน

ทั้งคู่ได้ตัดสินใจย้ายมาปายในปีพ.ศ. 2542 ด้วยเจตนาที่ต้องการจะเปิดร้านกาแฟ และได้ทำเลเหมาะสมกับความต้องการเป็นอย่างยิ่ง คือ บ้านไม้สักเก่าที่ถูกปิดร้างเอาไว้บน ถนนชัยสงคราม รวมไปถึงความปลาบปลื้มที่คุณ วนิชา บุษกร ยินดีให้ทั้งสองเช่าบ้านหลังนี้อีกด้วย

เจ้าของบ้านได้เล่าประวัติความเป็นมาของบ้านหลังนี้ให้ฟังว่า บ้านหลังนี้อยู่กันมานานหลายชั่วคน มีอายุราว 140 ปี และได้ใช้เทคนิคการก่อสร้างแบบฉานดั้งเดิม ถึงแม้ว่าบ้านหลังนี้จะถูกสร้างขึ้นมาเป็นที่พักอาศัย แต่ก็มี ผู้อยู่อาศัยบางคนทำธุรกิจเล็กๆ แบบง่ายๆในสถานที่นี้เช่นกัน

ครั้งเมื่อ วัชรี และประภากร เริ่มต้นทำความสะอาด และปรับปรุงบ้านไม้หลังเก่า ทั้งคู่ก็ได้พบว่าสถานที่แห่งนี้เคยเป็นร้านอาหารที่ให้บริการเฉพาะชาวมุสลิม บางส่วนของบ้านได้ถูกทำการเปลี่ยนแปลงไปบ้าง ก่อนหน้าที่ทั้งคู่จะได้ทำการเช่า เช่น จากหลังคาใบตองตึงมาเป็นหลังคากระเบื้อง และสังเกตได้ว่าเจ้าของเดิมได้ปิดระเบียง เพราะต้องการขยายครัวไฟให้มีขนาดใหญ่ขึ้น ซึ่งดูจะเหมาะสมกับความต้องการของการออกแบบร้านกาแฟของทั้งคู่อยู่พอดี

ทั้งบัณฑิตจากรั้วจามจุรี และลาดกระบัง ดูเหมือนจะไม่ค่อยมีประสบการณ์ในการปรับปรุงอาคารเท่าไรนัก แต่ทั้งคู่ก็ได้เรียนรู้จากประสบการณ์ และด้วยความช่วยเหลือจากสล่าพื้นเมืองที่มีความรู้เรื่องการสร้างบ้านในแบบฉานเป็นอย่างดี ค่าใช้จ่ายการซ่อมแซม และปรับปรุงร้านมีมูลค่าเท่ากับรถยนต์ที่ได้ขายไป

เมื่อ 140 ปีก่อนนั้น ยังไม่มีถนนตัดผ่านบ้านไม้หลังนี้ แต่เมื่อมีการสร้างถนนก็ได้มีการถมดินให้สูงขึ้น ทำให้ระดับบ้านอยู่ต่ำกว่าถนน ดังนั้นสิ่งแรกที่ทั้งคู่ทำการปรับปรุงคือ ยกระดับพื้นบ้านให้เท่ากับระดับถนนชัยสงคราม โดยเอาทรายมาถม เปลี่ยนตอม่อที่ผุกร่อน และกำจัดฝุ่นที่จับตัวหนาเพราะด้วยสภาพที่ถูกทิ้งไว้นาน

ปัจจุบันร้านกาแฟแห่งนี้เปิดให้บริการมากว่า 7 ปี วัชรี และประภากร ได้ตั้งข้อสังเกตว่า อย่างน้อยก็ครึ่งหนึ่งของลูกค้า ชอบบรรยากาศสบายๆในร้าน ตำนานของบ้านไม้เก่าหลังนี้ พอๆกับที่ชอบดื่มกาแฟ (ที่คั่วอย่างเป็นพิเศษ ของครอบครัว วาณิชยานนท์ จากกรุงเทพฯ) ทั้งคู่เล็งเห็นว่า ใน อำเภอปายมีร้านกาแฟเกิดขึ้นมากมาย แต่มีเพียงไม่กี่ที่ ถือเป็นของแท้ แน่นอนว่าทังคู่มีความเชื่อมั่นในบรรยากาศของสถาปัตยกรรมแบบเก่า ที่จะทำให้ลูกค้าจิบกาแฟได้อย่างออกรสชาติอีกด้วย

ร้านกาแฟ All about coffee มีลูกค้ามาอุดหนุนอยู่เป็นประจำ และมักมีผู้คนมาใช้บริการมากกว่าปรกติในฤดูท่องเที่ยว สำหรับครอบครัวกาแฟวาณิชยานนท์ สามารถเป็นตัวอย่างให้กับหลายๆ ธุรกิจ ว่าการรักษาไว้ซึ่งวัฒนธรรมนั้นเป็นกำไรอย่างหนึ่งในเรื่องของธุรกิจได้เช่นกัน

เขา เธอ และเจ้าของบ้าน ต่างก็มีความหวังเดียวกันว่า เจ้าของบ้านไม้เก่าคนอื่นๆ จะคงยังคงรักษา และดูแลบ้านของตนเอง และไม่คิดจะแทนที่เคหสถานของตนด้วยอาคารคอนกรีตอันทันสมัยต่อไป
